We’re still just into the new year and if there’s one common resolution that many people make, it’s to eat healthier. While that’s a pretty vague resolution, one good approach is to take a more plant-based approach to your diet.

Sure, some people may just flip the switch and want to go full vegan, but maybe you just want to add some vegetarian recipes into your diet. The Flexitarian approach to eating (mostly plants, but still having meat on occasion) is popular for a lot of people, but with the modern western diet being so focused on meat and animal products, it can be daunting to make a switch.

Never fear! We’re here to help with 5 vegetarian recipes that even a die-hard carnivore will love! I put myself into that category and I’ve tried every one of these recipes at home with really excellent (and delicious!) results.  

Before we dive into the recipes, a couple of quick notes. Always remember that most recipes are a bit flexible in terms of ingredients. So, if there are certain items in any of these recipes that you really don’t like (mushrooms? meh), you can likely make some substitutions, as long as the core ingredients stay the same.

Quick tip – don’t take this approach in baking. Changing even one ingredient in a baking recipe could spell absolute disaster if you aren’t a pro.

Szechuan Tofu and Veggies

You’re going to find a couple of recipes here with tofu. If you haven’t cooked with tofu before, give it a try. You will be pleasantly surprised at both how easy it is to cook and also how flavorful it can be as a meat substitute. This dish brings a little heat to a very simple Asian bowl dish. The key ingredients are tofu and the Szechuan sauce. The rest is really up to you, as you can add whichever veggies appeal to you. Personally, I like the mix of cabbage, carrots, and then a green veggie like asparagus. You end up with a really colorful-looking dish that is packed with flavor.

Who doesn’t love tacos? If your answer is yes, you can just move along now. But, I expect no one said yes, because tacos are amazing. I consider myself a fairly sophisticated taco connoisseur, but my go-to recipes always involve meat of some sort. So, it was a bit of a step outside my comfort zone to try these black bean tacos. Consider it a successful step, as black bean tacos can be every bit as delicious as my usual chicken, beef, etc. options. This recipe from Delish Knowledge is really more of a guideline for using black beans as the focus of your taco and then gives you a lot of options around it. I virtually guarantee you will love the results.

There’s a reason that ‘meat and potatoes’ get put together. Potatoes are a great part of a filling meal. But, as anyone who enjoys a loaded baked potato can attest, they can also easily become the centerpiece of a meal. So, check out this super-filling spin on the loaded baked potato, that will easily remove the need to put a steak next to it on your plate. It uses black beans to add more protein to the dish and you get some really great flavor from the salsa and avocado. If you’re not a big avocado fan (I am definitely not, but my wife loves them), you can just remove that from the final dish.

Here’s our other tofu recipe, although the tofu is actually optional. I personally think it helps make this a much heartier meal, so it’s highly recommended. This is a very simple and quick dinner recipe that brings out some great Asian flavors. Much like the Szechuan recipe above, you can really add whatever veggies you want to this one. One good approach is to try to add at least three different colors into that veggie mix. Red peppers, purple for the cabbage, green for the snow peas or edamame, etc. This is also one where mushrooms are entirely optional. If you’re not a fan of mushrooms, but want to give them a try, cut them extra small and you won’t even notice them in there.

Chili is a pretty carnivorous meal in the vast majority of cases. In fact, there’s a real debate on whether traditional chili should even have beans in it (I firmly believe it doesn’t need them). But, we’re making vegetarian chili here, so you better believe there are beans in the recipe and that’s just fine. This recipe makes a very flavorful and hearty chili. Pro tip: if you want to add even a bit more heartiness to your chili recipe, consider adding potatoes. Just make sure they are cut up into bite-sized pieces and boiled prior to putting them into your chili. Almost any type of potato works, but you can also get adventurous and try things like sweet potato.

The Le Creuset is pretty much a household name when it comes to enameled cast iron cookware. You’ve almost certainly seen their multi-colored dutch ovens and other pans at their retail locations. They have been making a name for themselves since 1925 and they make beautiful and striking enameled cast iron cookware that will be a showstopper in any kitchen.  

All Le Creuset cookware is made in France ouf of cast iron, before the bold enamel colors are added. In particular, the brand is noen for its dutch ovens, but they also offer a variety of other pots and pans in a wide range of shapes and sizes. Like All-Clad, you will pay a price for the Le Creuset name, but it can be worth it for a pan that can last a lifetime.

Well if you got sticker shock looking at those All-Clad and Le Creuset prices, Made-In could be what you’re lookin for. This newer company (founded in 2016 in Austin, TX) offers professiona-quality cookware at more affordable prices. They have already gained credibility by being used in over 1,500 professional kitchens, including Michelin-star rated restaurants like Le Bernardin in NY and Alinea in Chicago. 

The prices are lower than some of the high-end competitors because they have adopted a direct-to-consumer model, where you can only buy Made-In cookware directly from the manufacturer. You won’t see them in any store.  They have several high-quality product lines including stainless steel, non-stick, copper, and blue carbon steel cookware.

Once you get into the copper cookware, the pricing starts to go up quite a bit. Let’s be clear, these aren’t inexpensive pots and pans, but they will typically be significantly lower than some of the others on this list.  While they are new to the industry, their quality is expected to hold up with some of the other heavyweights in the years to come. So, this represents a potentially more cost conscious option for those still wanting professional quality cookware.

Looking for non-stick cookware? Scanpan should be on your list to consider. This Denmark brand has been in the business since the 1950s offering sustainable cookware long before it was a trend. Pans are created with 100% recycled aluminum to reduce waste. 

These pans have received rave reviews from places like Good Housekeeping and other cooking review sites as a great choice for quality non-stick cookware that also happens to be environmentally friendly. When it comes to price, Scanpan is a bit more costly than a typical ceramic non-stick pan, but it’s also not typically ‘break-the-bank’ expensive.

Wait a minute, don’t I see Lodge cast iron pans for sale in my local grocery store? How can that be high end? Well, just because you can find them in a lot of places doesn’t mean that Lodge isn’t the top of the line when it comes to cast iron cookware. The brand has been around since 1896, making it the oldest one on our list. The US, family-owned brand in Tenessee makes a wide variety of skillets, woks, dutch ovens, griddles, and all kinds of other cookware. 

Lodge cast iron skillets are favorites of professional chefs, food magazines, cooking show hosts, and consumers alike. This is also a care where getting the best quality won’t empty your wallet. Lodge cast iron cookware isn’t necessarily cheap, but it can fit just about any home chef’s budget, if you buy them over time.

Many chefs will tell you that if you can only own a couple of pots and pans, that one of them should be a cast iron skillet. So, give strong consideration to adding a Lodge pan to your kitchen arsenal.

This 5-ingredient white chicken chili recipe from Gimme Some Oven is super quick and easy to make, full of great flavor, and always a crowd fave!

Ingredients

  • 6 cups chicken stock
  • 3 to 4 cups cooked shredded chicken
  • 2 (15-ounce) cans beans of your choice, rinsed and drained (I used Great Northern beans)
  • 2 cups (16 ounces) salsa verde (store-bought or homemade)
  • 2 teaspoons ground cumin
  • optional toppings: diced avocado, chopped fresh cilantro, shredded cheese, chopped red or green onions, sour cream, crumbled tortilla chips, fresh jalapeño slices

Instructions

  1. Combine ingredients.  Stir together chicken stock, shredded chicken, beans, salsa and cumin in large stockpot.
  2. Bring to a simmer.  Cook on high heat until the soup reaches a simmer. Reduce heat to medium-low and continue simmering for 5 minutes.
  3. Serve.  Serve immediately, garnished with lots of your favorite toppings.

When it comes to Italian comfort food, a bowl of spaghetti and meatballs is a staple. Add a glass of wine, garlic bread and caesar salad and in front of you is the perfect Italian spread rich with flavorful ingredients. 

This easy spaghetti casserole recipe takes about an hour and a half to prepare and only requires a couple of ingredients. This dish feeds four to five people. 

Ingredients:

  • 1 lb. ground beef
  • 1 jar of spaghetti sauce (your choice)
  • 8 oz. of sour cream 
  • 1 can of cream of mushroom soup
  • 1 package (8 oz.) of spaghetti noodles 
  • 1 pack (8 oz.) of shredded cheese (your choice) 

Directions:

  1. Brown your meat, drain and add in spaghetti sauce. Season with salt, pepper and garlic salt. 
  2. Boil enough noodles to fill about half of a casserole dish. Keep the noodles separate from the sauce
  3. Mix sour cream and cream of mushroom soup in a bowl. 
  4. Layer the bottom of your casserole pan with noodles.
  5. Add your sour cream/cream of mushroom mixture for the second layer. 
  6. Top it off with your meat sauce. 
  7. Bake at 350 degrees for 30 minutes covered with aluminum foil. 
  8. After 30 minutes, top it off with shredded cheese (your preference). 
  9. Put back in the oven for 10 more minutes uncovered. 
  10. Let cool then enjoy!

The holidays are upon us and that means a seemingly unending supply of treats and holiday goodies to sample. Which ones are playing a bigger role in expanding waistlines as we head into 2022? Here is a very unscientific list of the favorite holiday treats from the At Home Daily editorial staff.

Pumpkin Pie

This is really more of a Thanksgiving treat to me, but it got plenty of support as a favorite for the Christmas season as well. As a kid, I was not a fan, but at some point, my tastes changed and I have to admit this is one of my favorites now. But, it needs to be chilled and topped with whipped cream. It’s just not as good when it’s room temperature. 

Eggnog

There was no real consensus about whether this was the alcoholic or non-alcoholic variety, so we’ll leave that open to interpretation. Candidly, this was not on my list. I’m not personally a fan of drinking eggs – and yes, the recipe typically contains egg whites and yolks. That feels a bit too much like a scene from Rocky or from lifting weights in the days before you could get reasonably good-tasting protein shake mixes. So, it’s a hard pass for me, but many of the rest of the staff really likes it.  I know, their taste is now questionable. 

Peppermint Bark

Peppermint and milk chocolate (or white chocolate). Nothing wrong with that combination and that was confirmed by our informal poll.  I’m personally partial to the brand you can buy from Williams-Sonoma, but you can make it at home or get it from any number of retailers. Definitely best served chilled, so the bark has a little crunch.  Ugh, now I’m craving peppermint bark writing this article.  LOL!

Gingerbread

Not everyone loves gingerbread. It’s a unique taste combination of sweet and a bit tangy from the ginger. But, if that combo floats your boat, as it does with a lot of our editorial team, then you know why this makes the list. I’m definitely a fan myself. A good gingerbread muffin or other soft version is my favorite. But a crunch Gingerbread Man is still perfectly acceptable. This is a flavor that definitely brings out the holiday spirit.

Candy Canes

Now to be clear, we’re talking about a decent candy cane and not some cheap version that you can get 10 for a $1 at the grocery store. But, the candy cane flavor is pretty synonymous with the Christmas season, and our crew agrees. They also make nice Christmas Tree ornaments that you end up eating, instead of just throwing back in the decoration box every year.

Christmas Cookies

This is a bit of a catch-all as we couldn’t really agree on what a ‘Christmas Cookie’ entailed. In my opinion, this generally means a sugar cookie that is decorated with some holiday theme. Maybe it’s cut out in the shape of a Christmas Tree or a reindeer or has a Santa image in icing on top. But, the basis is usually a simple sugar cookie that is then elevated with sprinkles, icing, or some other overly sweet add-ons. 

Hot Chocolate

This is most popular in places where it gets cold during the holiday season for obvious reasons, but a nice steaming cup of hot chocolate is a welcome addition to just about anything holiday-related. What I tend to envision is coming off the ski slope and grabbing a cup of hot chocolate to warm up. 

What’s Missing?

I’m sure some favorites are missing from this very arbitrary list. Which ones come to mind?

Fruitcake – Yes, we discussed it and it was unanimously rejected. I know there are fruitcake fans out there… somewhere.  But, not among the AHD team.  

Mimosas! This came up several times as a favorite Christmas morning beverage. But, we’re keeping the list kid-friendly, so we decided to leave it off.  But, it does indeed show up at every Christmas morning at my house.  🙂

One of my favorite smells to herald the holiday season is mulled spices. I’m talking cinnamon, star anise, and cloves. One of the best things you can make that incorporates the essence of these smells is mulled wine, or authentically known as glühwein

This is a wonderful (and easy) adult holiday beverage you can make for parties, or to get your house smelling like Christmas. Check out this recipe from New York Times Cooking.

Ingredients

  • 2 large oranges
  • 4 ¼ cups/1 liter red wine
  • 1 ¼ cups/10 ounces brandy
  • ½ cup dark brown sugar
  • 2 cinnamon sticks
  • 6 whole cloves
  • 3 cardamom pods, slightly crushed

Instructions

  1. Using a peeler, remove the peel in strips from 1 orange then juice the orange. Slice the other orange into rounds and reserve for garnish.
  2. In a nonreactive saucepan, combine orange peel, juice and the rest of the ingredients. Stir over medium heat until the sugar dissolves, about 2 minutes. Increase the heat to high, bring mixture to a boil, then immediately reduce the heat to low. Simmer gently until flavors meld, about 30 minutes. Strain the mixture, discarding the solids.
  3. Ladle into cups or mugs. Garnish each with a reserved orange round.
